I have always had trouble choosing between a rich, fudgy brownie and a soft, chewy cookie and therefore, I though why not combine them. Brownie cookies bring the best of both worlds—crispy edges, a chewy centre, and that deep, chocolatey flavour that makes brownies so irresistible. After countless trials (and plenty of taste testing!), I’ve perfected a recipe that guarantees crinkly tops, gooey centres, and intense chocolate flavour in every bite. These brownie cookies are decadent, easy to make, and completely addictive—the kind of treat that disappears within minutes of coming out of the oven.

What Makes These Brownie Cookies the Best?

Ingredients You’ll Need (makes around 18-20 big cookies)
Wet Ingredients:
8 oz (225g) dark chocolate (at least 60% cocoa), chopped
½ cup (113g) salted butter
¾ cup (75g) brown sugar
½ cup 50g) granulated sugar
2 large eggs, at room temperature
1 teaspoon vanilla extract
Half a shot of espresso
Dry Ingredients:
¾ cup (95g) all-purpose flour
¼ cup (25g) unsweetened cocoa powder
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
Mix-Ins (Optional but Recommended!):
½ cup (85g) dark chocolate chips
½ cup (60g) chopped walnuts or pecans (for extra crunch)
How to Make the Best Brownie Cookies
Step 1: Melt the Chocolate & Butter
In a heatproof bowl, melt the dark chocolate and butter together over a double boiler (or microwave in 20-second intervals, stirring each time) until smooth. Let it cool slightly.
Step 2: Beat the Eggs & Sugars
In a large mixing bowl, whisk the brown sugar, granulated sugar, and eggs together for about 2 minutes, until the mixture becomes light and fluffy. This step is key for getting those crinkly tops!
Step 3: Add the Chocolate, Vanilla and coffee
Slowly pour the melted chocolate into the egg mixture, stirring continuously. Add the vanilla extract and espresso shot and mix until smooth.
Step 4: Mix the Dry Ingredients
In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt. Gradually add this to the wet ingredients, mixing just until combined.
Step 5: Fold in the Chocolate Chips & Nuts
Gently stir in the chocolate chips (and nuts, if using) for extra texture and flavour.
Step 6: Chill the dough
Chill the dough for at least three hours so that it is easier to form into balls.
Step 7: Scoop & Bake
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Scoop 1.5-tablespoon-sized mounds of dough onto the baking sheet, spacing them about 2 inches apart.
Bake for 9–11 minutes, until the tops are glossy and slightly cracked. The cookies should be soft in the centre—they’ll firm up as they cool.
Step 8: Cool & Enjoy!
Let the cookies rest on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely. Or, if you’re like me, enjoy one warm with a cold glass of milk! 🥛🍪
Tips for the Perfect Brownie Cookies
✔️ Use good-quality chocolate – Since chocolate is the star, use a high-quality dark chocolate (at least 60% cocoa) for the best flavour.
✔️ Don’t overbake! – The cookies will look slightly underdone when they come out of the oven, but they’ll set perfectly as they cool.
✔️ Whisk the eggs & sugar well – This step creates air in the batter, helping to achieve the classic crinkly brownie top.
✔️ Let the dough rest for 5 minutes – This allows it to thicken slightly, making for thicker, chewier cookies.
